Recipe Directions:
Preheat oven to 375°F. Use a corer/paring knife to remove the cores, leaving the bottoms of the apples bottoms intact. Slice a thin sliver from tops of apples and discard. Place cored apples in an 8x8-inch baking dish. Combine dried fruit, nuts and cinnamon in a small bowl. Stuff apples evenly with mixture; sprinkle sugar over top of each. Add apple cider to the bottom of the dish and cover with aluminum foil.
Bake for 45-50 minutes, basting with liquid halfway through, until fork tender. As an alternative, microwave apples, uncovered, for 10-12 minutes; baste with liquid halfway through. Allow apples to sit for 2 minutes before serving. Drizzle each with 1 tsp. honey and serve apples warm with low fat frozen yogurt or light whipped cream if desired.
