Gluten Free Sweet Potato Bread Pudding

  1. 12 slices gluten-free multigrain bread, halved

  2. 1 1/2 cups mashed sweet potatoes*

  3. 4 eggs

  4. 5 egg whites

  5. 1 cup Giant Eagle sugar

  6. 2 cups 1% milk

  7. 1 Tbsp. vanilla extract

  8. 1 Tbsp. pumpkin pie spice

  9. 1/4 tsp. salt

  10. 1/2 cup chopped pecans

  11. Cooking Spray

Ingredients

  • 12 slices gluten-free multigrain bread, halved
  • 1 1/2 cups mashed sweet potatoes*
  • 4 eggs
  • 5 egg whites
  • 1 cup Giant Eagle sugar
  • 2 cups 1% milk
  • 1 Tbsp. vanilla extract
  • 1 Tbsp. pumpkin pie spice
  • 1/4 tsp. salt
  • 1/2 cup chopped pecans
  • Cooking Spray

Recipe Directions:

Preheat oven to 350˚F. Coat a 9x13-inch baking dish with nonstick spray. Layer bread halves into baking dish. Place remaining ingredients, except for pecans, in a blender; process until smooth. Pour over bread slices and use clean fingers to press down to ensure bread is evenly coated. Let sit for 5 minutes; sprinkle pecans over top. Cover with aluminum foil and bake for about 40 minutes. Remove foil and bake for an additional 10-15 minutes until set and internal temperature reaches at least 160˚F. Makes 12 servings based on 2 halves per portion.

*Use canned or leftover sweet potatoes.
