  • 2 tsp. Worcestershire sauce
  • 1/2 cup red wine
  • 1 cup Market District chicken stock

  • 2 egg yolks
  • 3/4 cup Parmagiano-Reggiano cheese, divided

Recipe Directions:

Preheat oven to 350 degrees Fahrenheit. In a medium sauté pan over medium heat, brown lamb and drain fat. Add onion, carrots, garlic, thyme and rosemary, and cook for 3-4 minutes. Mix in tomato paste and cook for 2 minutes, stirring frequently. Add Worcestershire sauce and red wine, and reduce by half, about 10 minutes. Add chicken stock and season with salt and pepper to taste. Pour into an 8x8-inch glass dish. Peel and wash potatoes. Place in a medium-sized pot and fill with enough water to cover completely. Bring water to a boil and cook potatoes until fork tender, about 30 minutes. Drain water and let potatoes cool slightly. Cut into large chunks. Place potatoes, egg yolks, and ¼ cup cheese in food processor and purée until smooth. Season with salt and pepper to taste. Spoon potatoes over lamb mixture and smooth out with a spatula. Evenly sprinkle with ½ cup cheese. Bake for 20-25 minutes until golden brown.
