1/2 cup cornmeal
1 Tbsp. flour
1 tsp. crushed oregano
1/2 tsp. ground chili powder
2-1/2 to 3 lb. Giant Eagle chicken breast halves, skinless
Spray a baking pan with vegetable oil. It should be large enough to hold the chicken in a single layer.
Combine cornmeal, flour, oregano and chili powder in a gallon size plastic bag.
Rinse chicken pieces in water. Roll or shake a few pieces at a time in bag with cornmeal mixture.
Arrange chicken on pan and spray again with cooking oil. Optional: drizzle lightly with melted butter or margarine.
Bake in a 375 F oven 25 minutes or until tender. This does not need to be turned.
