Rice and Artichoke Salad

  1. 3 cup Cooked brown and white rice

  2. 1/2 cup Golden raisins

  3. 1 cup Fresh sugar snap peas

  4. 1 can Artichoke hearts

  5. 1/2 cup Chopped red bell pepper

  6. 1 cup Chopped seeded tomato

  7. 1/4 - 1/2 cup Pine nuts, optional

  8. Spinach or romaine leaves

  9. Fat-free vinaigrette dressing

Ingredients

  • 3 cup Cooked brown and white rice
  • 1/2 cup Golden raisins
  • 1 cup Fresh sugar snap peas
  • 1 can Artichoke hearts
  • 1/2 cup Chopped red bell pepper
  • 1 cup Chopped seeded tomato
  • 1/4 - 1/2 cup Pine nuts, optional
  • Spinach or romaine leaves
  • Fat-free vinaigrette dressing

Recipe Directions:

1) Drain and cool the rice 2) Steam or microwave the peas with raisins for 5 minutes. Cool. 3) Combine all of the ingredients with 1/3 - 1/2 cup dressing. Chill for at least 1/2 hour. 4) Serve on torn spinach or romaine leaves
