All-Purpose Crêpes

  1. 2 eggs, beaten

  2. 1/2 cup water

  3. 3/4 cup 2% milk

  4. 1 cup all-purpose flou

  5. 2 Tbsp. melted butter

  6. - Canola oil with butter cooking spray

  7. - Filling of your choice

Ingredients

  • 2 eggs, beaten
  • 1/2 cup water
  • 3/4 cup 2% milk
  • 1 cup all-purpose flou
  • 2 Tbsp. melted butter
  • - Canola oil with butter cooking spray
  • - Filling of your choice

Recipe Directions:

Preheat oven to 200°F. Place first 5 ingredients in a blender for 15-20 seconds. Cover and refrigerate for at least 1 hour. Using a nonstick pan, heat a small amount of cooking spray on medium-high heat. Use a ladle to pour 2 ounces of crêpe batter into the pan. Lift pan to gently swirl in a circular motion so that the batter spreads evenly over the center and sides of the pan. Return to heat and cook for 25-30 seconds. Gently flip the crêpe and continue cooking for 15-20 seconds. Place the crêpe on a parchment-lined baking sheet in oven to keep warm until you are ready to assemble. Recoat the pan with cooking spray between each crêpe. Variations: Creative Crêpes ¿ Crêpes can be finished with any number of fillings and toppings. Some of our favorites include sliced strawberries with Double Devon Cream, blueberries with Mascarpone, and smoked salmon with crème fraîche ¿ all topped off with whipped cream or a dollop of our freshly made Romanoff sauce, which you can find in our fresh berry case.
