Ingredients

  • 1 large potato
  • 1 medium onion
  • 1 medium red pepper
  • 1 medium green pepper
  • 1/4 cup KRAFT Zesty Italian Dressing
  • 3 egg
  • 1 can evaporated milk
  • 1 tsp. dried thyme leaves
  • 2 cups quinoa
  • 1 pkg. OSCAR MAYER Smoked Ham
  • 1 pkg. KRAFT Shredded Cheddar Cheese

Recipe Directions:

Preheat oven to 375°F. Bring 2 qt. water to boil in medium saucepan on high heat. Add potatoes. Reduce heat to medium-low; simmer 5 min. Drain; rinse potatoes with cold water. Drain; set aside. Cook onions and peppers in dressing in medium skillet on medium-high heat 10 min. or until vegetables are crisp-tender; set aside. Beat eggs, milk and thyme in large bowl with wire whisk until well blended.Layer half of the potatoes in bottom of 2-qt. casserole dish sprayed with cooking spray. Top with half each of the quinoa, ham, cheese, vegetable mixture and egg mixture. Repeat layers; cover with aluminum foil.Bake 45 min. or until potatoes are tender. Let stand 5 min. before serving.
