Healthy Sweet Potato Lentil Stew

  1. 1 Tbsp. Market District extra virgin olive oil

  2. 4 cup vegetable broth or Giant Eagle chicken broth

  3. 3 cup sweet potatoes, peeled & cubed (about 1-1/4 lbs.)

  4. 1-1/2 cup lentils, rinsed

  5. 3 medium carrots, cut into 1-inch pieces

  6. 1 medium onion, chopped

  7. 4 clove garlic, minced

  8. 1/2 tsp. ground cumin

  9. 1/2 tsp. ground ginger

  10. 1/4 tsp. cayenne pepper

  11. 1/4 cup fresh cilantro or parsley, minced

  12. salt and pepper to taste

Ingredients

  • 3 cup sweet potatoes, peeled & cubed (about 1-1/4 lbs.)
  • 1-1/2 cup lentils, rinsed
  • 3 medium carrots, cut into 1-inch pieces
  • 1 medium onion, chopped

  • 1/2 tsp. ground cumin
  • 1/2 tsp. ground ginger
  • 1/4 tsp. cayenne pepper
  • 1/4 cup fresh cilantro or parsley, minced

Recipe Directions:

Combine all ingredients except for the salt and pepper and the cilantro or parsley in a 4-5 quart slow cooker. Cook on low for 5-6 hours or until vegetables are tender. Stir in cilantro and seasonings just before serving.
