  8. 1-1/2 lb. mussels

  9. 1 lb. red snapper

  10. 1 lb. shrimp

Ingredients

  • 6 slices OSCAR MAYER Bacon
  • Red Sofrito
  • 1 small onion
  • 1 qt. chicken broth
  • 1 can diced tomatoes
  • 1 cup coconut milk
  • 1/2 cup fresh cilantro
  • 1 serrano chile
  • 1-1/2 lb. mussels
  • 1 lb. red snapper
  • 1 lb. shrimp

Recipe Directions:

Cook bacon in 7-qt. stockpot. Use slotted spoon to remove bacon from pan, reserving 1 tsp. drippings in pan. Drain bacon on paper towels. Add Red Sofrito and onions to pan; cook 3 min., stirring frequently. Stir in next 5 ingredients; bring to boil. Simmer on low heat 10 min. Add mussels; cover. Cook 2 min. Add red snapper; cook, covered, 2 min. Add shrimp; cook, covered, 4 min. or until shrimp turn pink. Discard any unopened mussels.Top stew with bacon.
