All You Need: 1-1/4 Cups Chilled Beer (one 12 oz can) or Water; 3 lbs Fish or Seafood (if using frozen fish, thaw completely and dry thoroughly with paper towels before coating with batter); Vegetable Oil or Shortening. 1. Combine beer or water with Batter Mix in shallow bowl. Stir until smooth. 2. Dip fish, cut into serving size pieces, into batter. Shake off excess. 3. Heat oil to 375 degrees F. Fry fish, a few pieces at a time, about 3-5 minutes or until golden brown, turning once to brown evenly. Remove and drain. Frying Suggestion: Pour oil or melt shortening in large heavy skillet, saucepan or deep-fryer. Fill no more than half full with oil, but deep enough for food to float while frying; avoid overcrowding.
