Cheddar Cheese
Cheddar cheese, a hard yellow or white cheese, is one of the best selling cheeses in the English-speaking world. Though in America this cheese is associated with Vermont or New York, cheddar actually originated in Cheddar, England. While its origins remain a bit mysterious, it is well known that dairy farmers created the cheese to use leftover milk, because there was no refrigeration.
The cheese-making process, known as "cheddaring," involves kneading curds with salt to create the dense, smooth cheese. After it is tightly wrapped and stored, the flavor matures.
Though Cheddar, England, is the home of cheddar, cheddar cheeses made around the world have characteristics in common. Cheddars have a tangy taste with a hint of nutty flavor. Sharp cheddars have an intense taste, while mild cheddars are sweeter and nuttier.
