Buying and Storing Ground Beef: Buy your meat last and separate raw meat from ready-to-eat foods in your shopping cart. Select ground beef that's bright, cherry-red, firm to the touch, and has no excessive liquid visible. Read the label. It will tell you the cut from which it was ground (chuck, round or sirloin) and its lean-to-fat ratio in percentages. Make sure the package is cold with no tears or holes and has a current purchase-by date. Wash hands, cutting boards, dishes, and utensils thoroughly with warm water and soap before and after handling raw meat. Sanitize kitchen countertops that come into contact with raw meat. Refrigerate or freeze beef as soon as possible after purchasing. Refrigerated ground beef should be cooked within one to two days. Freeze beef in its original transparent wrap for up to two weeks. Always defrost beef in the refrigerator, never at room temperature.
