About the Farm

The Szalay family has worked for over 80 years to make their name synonymous with top-quality sweet corn.  But, there’s another name that’s just as important around the farm – John. The farm was started by a man named Big Jim in 1931, but it’s been owned by John Szalay ever since. That’s because Big Jim passed the farm on to his son John, who passed it on to his son John – who plans to pass it on to… you guessed his son John! It’s a family tradition that doesn’t show any signs of stopping. In fact, swing by the farm and you may catch the next generation of Szalay farmers – 5 year old Eva and 2 year old Johnny helping out around the farm!

HOW TO PICK: SWEET CORN

Here’s how to pick a ripe ear of corn without removing the husk:

  • Look for some brown in silk.
  • Run your hand along the cob. Kernels should feel plump.
  • Feel for kernels all the way to the top to ensure it’s a mature ear of corn.

Boiled Honey and Cream Sweet Corn

Honey and cream sweet corn is a tender variety that’s sweet and crisp. The kernels will have that signature corn-on-the cob pop when cooked right.  Here’s how the Szalay’s cook it up at their house:

Bring a large pot of water to a boil.  Add husked ears of corn.  Boil 3-4 minutes. Remove ears from water and allow them to cool slightly. That’s it!

Tip: Don’t overcook your corn. It will get chewy.
