  1. 1 can (15 oz.) Giant Eagle black beans, rinsed & drained

  2. 1/4 cup Giant Eagle chunky salsa

  3. 1 small avocado, peeled & pit removed, then chopped

  4. 2 Tbsp. lemon juice

  5. 1/2 head iceberg or romaine lettuce, chopped or shredded

  6. 1-1/2 cup Giant Eagle sour cream

  7. 1 cup shredded Giant Eagle Cheddar cheese

  8. 1 medium tomato, seeded & chopped

  9. 1/4 cup sliced black olives

  10. 1/4 cup red onion, finely chopped

  11. 2 Tbsp. fresh cilantro or chives, chopped

  12. Giant Eagle tortilla chips

Ingredients

  • 1/4 cup Giant Eagle chunky salsa
  • 1 small avocado, peeled & pit removed, then chopped
  • 2 Tbsp. lemon juice
  • 1/2 head iceberg or romaine lettuce, chopped or shredded
  • 1-1/2 cup Giant Eagle sour cream
  • 1 cup shredded Giant Eagle Cheddar cheese
  • 1 medium tomato, seeded & chopped
  • 1/4 cup sliced black olives
  • 1/4 cup red onion, finely chopped
  • 2 Tbsp. fresh cilantro or chives, chopped
  • Giant Eagle tortilla chips

Recipe Directions:

In a medium bowl, mix together the black beans and salsa, and set aside. In small bowl, toss the chopped avocado with lemon juice to prevent browning and set aside. Line serving plate with lettuce and top with layer of black bean mixture. Spoon sour cream onto beans. Sprinkle with avocado, cheese, tomato, olives, red onion and cilantro. Serve immediately with tortilla chips.

If desired, cover tightly and refrigerate until ready to serve. Can be made up to 4 hours ahead.
