  8. 6-8 oz. Gruyère cheese, grated

Ingredients

  • 1 cup Cabernet, Burgundy or cooking wine
  • 1 tsp. Worcestershire sauce
  • 2 bay leaves
  • to taste Salt and fresh-cracked black pepper, optional
  • 6-8 oz. Gruyère cheese, grated

Recipe Directions:

In a large, heavy saucepan, sauté onions in butter until golden brown, about 20 minutes. Add beef stock, wine,Worcestershire sauce and bay leaves. Bring to a boil, then simmer for 20 minutes. Remove the bay leaves and season soup with salt and pepper. Ladle hot soup into individual soup bowls, top with 1/4 cup croutons and sprinkle with 1 oz. Gruyère cheese. Serve immediately.
