  1. 2 lb. lamb cubes (from leg, cut into 1 1/2-inch cubes)

  2. 1 1/2 Giant Eagle Italian Salad Dressing

  3. 8 cherry or grape tomatoes

  4. 8 mushroom caps

  5. 1 green bell pepper, cut into chunks

  6. 1 red bell pepper, cut into chunks

  7. 1 yellow onion, cut into chunks

  8. Olive oil cooking spray

  9. Salt and pepper to taste

  10. Wooden or metal meat skewers

Ingredients

  • 2 lb. lamb cubes (from leg, cut into 1 1/2-inch cubes)
  • 1 1/2 Giant Eagle Italian Salad Dressing
  • 8 cherry or grape tomatoes
  • 8 mushroom caps
  • 1 green bell pepper, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 yellow onion, cut into chunks
  • Olive oil cooking spray
  • Salt and pepper to taste
  • Wooden or metal meat skewers

Recipe Directions:

Place lamb cubes in 1 cup of salad dressing, cover and refrigerate for one hour. Cut vegetables and toss in the remaining 1/2 c of salad dressing. Preheat the broiler or grill. Drain meat and discard marinade. Place meat on skewers, alternating with the vegetables. Spray kebabs with cooking oil, season with salt and pepper, and broil for 6 minutes. Turn and continue to broil (3¿5 minutes), brushing with the vegetable marinade. Meat should be browned and vegetables should be fork tender. Serve over rice pilaf, brown rice or couscous. Substitutions: Balsamic vinaigrette or red wine vinaigrette can be substituted for the Italian dressing. Chunks of zucchini can also be added to the vegetable mix.
