1/4 cup olive oil
2 head garlic
2 lb. Brie wheel
1/2 cup Greek or ripe olives, pitted and quartered
1 each French or Tuscany bread
Preheat oven to 400 degrees.
Pour oil into a heavy saucepan. Add garlic and cook over medium heat for 5 minutes or until garlic is soft. Remove and drain on paper towels.
Slice the thin rind from one flat side of the brie.
Place the brie cut side up on a baking sheet or in a baking dish.
Divide and peel the garlic and slice the cloves diagonally to make fans. Arrange fans and cut olives on top of the brie.
Bake uncovered for 10-12 minutes
Transfer to a serving plate.
This can be made ahead ready for baking. Wrap tightly.
