Ingredients

  • 3 cup blueberries, washed and drained, divided
  • 1/3 cup Giant Eagle sugar
  • 1 Tbsp. lemon juice
  • 1/2 tsp. vanilla extract
  • 1/2 quart lemon sorbet
  • optional Giant Eagle whipped topping or vanilla

Recipe Directions:

To make blueberry sauce, crush 2 cups blueberries with fork in a saucepan. Add sugar and lemon juice to the saucepan; mix well. Cook over medium heat, stirring occasionally. Bring to a boil, then reduce heat and simmer until thickened. Add vanilla. Remove from heat, pour sauce into a glass bowl, cover, and chill for at least one hour before preparing parfaits.

In a parfait glass, use the remaining 1 cup blueberries to layer a Tbsp. of blueberries followed by a scoop of lemon sherbet or lemon ice. Drizzle with desired amount of blueberry sauce. Repeat. Top with a dollop of whipped topping or vanilla yogurt if desired.
