6-minute Lemon Chicken

Prep Time: 5 minutes

Slow Cook Time: 6 minutes

  • ¼ lb. boneless, skinless chicken breasts, sliced thin
  • 2 tsp. butter
  • Juice from ½ lemon
  • 1 tsp. parsley

Preheat oven to 350°F.

Melt butter in pan over medium heat until bubbly. Add thin-sliced chicken and saute two minutes per side. Remove the cooked chicken to a warmed plate and "de-glaze" pan with lemon juice. Add parsley, stir quickly and pour over chicken as sauce.

Serving Suggestions:
Serve with a salad, a bowl of vegetable soup and a side of instant rice.
