Baked Cod

  1. 1/2 yellow pepper, thinly sliced

  2. 1/2 medium red onion, thinly sliced

  3. 1 Tbsp. Market District extra virgin olive oil

  4. Two 6-oz. Icelandic cod fillets

  5. To taste Kosher salt and freshly ground black pepper

  6. 1 Zest of lemon

  7. 2 Tbsp. fresh dill, chopped

  8. Parchment paper or aluminum foil

Ingredients

  • 1/2 yellow pepper, thinly sliced
  • 1/2 medium red onion, thinly sliced
  • 1 Tbsp. Market District extra virgin olive oil
  • Two 6-oz. Icelandic cod fillets
  • To taste Kosher salt and freshly ground black pepper
  • 1 Zest of lemon
  • 2 Tbsp. fresh dill, chopped
  • Parchment paper or aluminum foil

Recipe Directions:

Preheat oven to 450°F. Place rack in center of oven. In a medium skillet, sauté pepper and onion in olive oil until tender, about 10 minutes.

Place each fillet on a piece of parchment paper or foil. Season the fillets with salt and pepper; add dill and lemon zest. Top with sliced tomatoes and sautéed vegetables.

Fold parchment or foil over fillet and fold in edges to form a pouch. Place pouches on a baking sheet and bake at 450°F for 14-16 minutes.
