Chicken and Snow Pea Stir Fry

  • 2 boneless skinless breasts, cut into thin strips
  • ¾ cup chicken broth
  • ¼ cup soy sauce
  • 2 Tbsp. cornstarch
  • 1 tsp. peanut or vegetable oil
  • 1-½ cups sliced celery
  • ¼ pound snow pea pods, trimmed
  • 4 large mushrooms, sliced
  • 3 green olives, sliced
  • ½ cup slivered almonds, toasted
  • 2 cups hot cooked rice

Combine chicken broth, soy sauce and cornstarch into a small mixing bowl and set aside.

Over high heat, warm a wok. Pour in oil. Add chicken, stirring constantly until chicken is browned. Add celery, snow pea pods, mushrooms and green onions. Toss constantly, cooking until vegetables are soft and chicken is done.

Stir in broth mixture; cook, stirring constantly, until mixture thickens and boils. Continuing to stir, boil for 1 minute. Remove from heat and stir in almonds and serve over rice.
