Lemon London Broil with Roasted Corn

  • 2 pounds Market District Certified Angus Beef® top round London broil; cut 1½-inches thick
  • ⅓ cup olive oil
  • ⅓ cup lemon juice
  • 2 cloves garlic, crushed
  • ½ teaspoon salt, divided
  • ½ teaspoon pepper, divided
  • 6 ears corn on the cob
  • 2 tablespoons butter or margarine

Place steak in zipper locking plastic bag. Prepare marinade by combining oil, lemon juice, garlic and ¼ teaspoon each salt and pepper and pour over steak. Remove all air from bag. Refrigerate and marinate 6 to 8 hours, turning frequently.

Remove husks from corn and scrub with a brush to remove silk. Melt butter; stir in remaining salt and pepper. Brush corn with mixture. Wrap each ear of corn securely in heavy foil.

Remove steak from marinade; discard marinade. Place corn and beef on preheated grill over moderately hot heat. Grill corn for 20 minutes, turning frequently. Grill steak to desired doneness. Allow steak to rest 5 minutes; slice across the grain.
