Apple, Bacon and Endive Salad with Honey Vinaigrette

  1. 3 Tbsp. honey

  2. 1 Tbsp. lemon juice

  3. 1 Tbsp. Dijon mustard

  4. 1/2 Tbsp. white balsamic vinegar

  5. 1/2 tsp. kosher salt

  6. 1/8 tsp. cracked black pepper

  7. 1/2 cup canola oil

  8. 1 head frisee (curly endive), chopped

  9. 2 heads red endive, chopped

  10. 2 heads Belgian endive, chopped

  11. 2 Fuji, Washington or Gala apples, thinly sliced

  12. 1/2 lb. bacon, cooked and crumbled

  13. 1/2 cup walnuts, toasted

  14. 1/4 cup Point Reyes Original Blue cheese or Chevre, crumbled

Ingredients

  • 3 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 1 Tbsp. Dijon mustard
  • 1/2 Tbsp. white balsamic vinegar
  • 1/2 tsp. kosher salt
  • 1/8 tsp. cracked black pepper
  • 1/2 cup canola oil
  • 1 head frisee (curly endive), chopped
  • 2 heads red endive, chopped
  • 2 heads Belgian endive, chopped
  • 2 Fuji, Washington or Gala apples, thinly sliced
  • 1/2 lb. bacon, cooked and crumbled
  • 1/2 cup walnuts, toasted
  • 1/4 cup Point Reyes Original Blue cheese or Chevre, crumbled

Recipe Directions:

To make vinaigrette, combine all ingredients except oil in a bowl and whisk. Add oil and whisk well until blended. Arrange the endive on a platter. Drizzle honey vinaigrette over and toss to distribute evenly. Top with apple slices, crumbled bacon, walnuts and crumbled blue or goat cheese.
