  1. 2 15 oz. cans Giant Eagle chickpeas, drained and rinsed

  2. 5 Tbsp. olive oil, divided

  3. 2/3 cup Vidalia onion, minced

  4. 1 large Arkansas tomato, sliced and divided for use in BLT (about ¾-1 lb. total)

  5. 1 head iceberg lettuce, cored and cleaned, divided for use in BLT

  6. to taste Salt and pepper

  7. 8 slice Giant Eagle bakery ciabatta bread

  8. 1 package Giant Eagle ready cook bacon

  9. optional Miracle Whip fat free dressing

Ingredients

  • 2 15 oz. cans Giant Eagle chickpeas, drained and rinsed
  • 5 Tbsp. olive oil, divided

  • 1 head iceberg lettuce, cored and cleaned, divided for use in BLT

  • 8 slice Giant Eagle bakery ciabatta bread
  • 1 package Giant Eagle ready cook bacon
  • optional Miracle Whip fat free dressing

Recipe Directions:

Place chickpeas in medium bowl and mash coarsely with fork. Add 3 Tbsp. oil and onion and mix. Reserve 4 or more slices of tomato for sandwiches; finely dice the remaining tomato and add to chickpea mixture. Reserve 4-8 leaves of lettuce for sandwiches and chop the remaining lettuce finely. Add approximately 3 cups chopped lettuce to chickpea mixture and toss. Drizzle remaining 2 Tbsp. oil over mixture and toss again. Season with salt and pepper to taste. Refrigerate covered while preparing sandwiches. Preheat oven to 350°F. Heat bacon according to package instructions. Place eight slices of Ciabatta bread on a baking sheet and toast the Ciabatta bread in the oven for 3-4 minutes or until lightly browned. Spread desired amount of Miracle Whip on toasted bread. Assemble the sandwich by layering bacon, tomato, and lettuce in between toasted bread.
