Spinach and Shrimp Salad

  1. 1 frozen cooked baby shrimp, thawed

  2. 1 baby spinach leaves

  3. 1 medium red or yellow bell pepper, cored, seeded and diced

  4. 1 cup grape tomatoes, halved

  5. 1/4 cup reduced-fat sour cream

  6. 1/2 cup reduced-fat buttermilk

  7. 1/8 tsp. salt or to taste

  8. dash pepper

  9. 1/4 cup chopped scallions, green parts only

  10. 1 Tbsp. minced fresh dill weed

  11. 1 sliver garlic, minced

  12. 1 to 1-1/4 tsp. lemon juice

  • 1 frozen cooked baby shrimp, thawed
  • 1 baby spinach leaves
  • 1 medium red or yellow bell pepper, cored, seeded and diced
  • 1 cup grape tomatoes, halved
  • 1/4 cup reduced-fat sour cream
  • 1/2 cup reduced-fat buttermilk
  • 1/8 tsp. salt or to taste
  • dash pepper
  • 1/4 cup chopped scallions, green parts only
  • 1 Tbsp. minced fresh dill weed
  • 1 sliver garlic, minced
  • 1 to 1-1/4 tsp. lemon juice

Recipe Directions:

1. Place thawed shrimp in a colander and drain well, gently pressing out excess liquid by hand. Place shrimp in large salad bowl. Add spinach, bell pepper and tomatoes. Toss gently but well. 2. Combine sour cream, buttermilk, salt, pepper, scallions, dill weed and garlic in blender. Puree. Add 1 teaspoon lemon juice; adjust lemon juice if desired.
