Salsas are a great summer party starter, so why not use local produce to make our recipe for flavorful Jalapeño Garden Salsa bursting with farm-fresh tomatoes, peppers and onions. Local Tomato Salsa
Local Tomato Salsa

Serves: 4
Prep. Time: 10 minutes
Chill Time: 1 hour

Ingredients:
  • 6 local Roma tomatoes, diced
  • 2 local jalapeño peppers, finely diced*
  • ½ cup finely diced local sweet onion
  • 3 Tbsp. chopped fresh cilantro
  • 3 Tbsp. lime juice
  • Salt and freshly ground pepper to taste
 
Directions:

Combine all ingredients in a small bowl. Cover and chill for 1 hour before serving.

Local Black Bean and Corn Salsa

Chill Time: 1 hour

Ingredients:
  • ½ cup Giant Eagle canned black beans, drained and rinsed
  • ½ cup cooked local corn kernels
  • ¼ cup diced local red pepper
  • ¼ cup diced local green pepper
  • 2 Tbsp. diced local sweet onion
  • 1 Tbsp. diced local jalapeño pepper*
  • 2 cloves garlic, minced
  • 2 Tbsp. chopped fresh cilantro
  • 2 Tbsp. white balsamic vinegar
  • Salt and freshly ground pepper to taste
 
Directions:

Combine all ingredients in a medium bowl. Cover and chill for 1 hour before serving.

Ingredients:
  • 2 local tomatoes, diced
  • 1 local yellow pepper, diced
  • 1 local green pepper, diced
  • 3 Tbsp. local minced jalapeño pepper*
  • ⅓ cup local diced sweet onion
  • 1 lime, juiced
  • 2 Tbsp. minced fresh cilantro
  • Salt and pepper to taste
 
Directions:

Combine all ingredients and allow time to marinate, covered and refrigerated for at least one hour.
