Braised Mustard Greens and Cabbage

  1. 1/2 lb. uncured bacon, diced

  2. 1 small yellow onion, sliced

  3. 1 lb. bag chopped mustard greens

  4. 7 cup green cabbage, cored and chopped

  5. 3-1/2 cup water

  6. 1 tsp. sugar

  7. 1 tsp. fresh thyme leaves

  8. 1 tsp. smoked paprika

  9. 2 Idaho potatoes, peeled and cut into large cubes

  10. to taste Salt and pepper

Ingredients

  • 1/2 lb. uncured bacon, diced
  • 1 small yellow onion, sliced
  • 1 lb. bag chopped mustard greens
  • 7 cup green cabbage, cored and chopped
  • 3-1/2 cup water
  • 1 tsp. sugar
  • 1 tsp. fresh thyme leaves
  • 1 tsp. smoked paprika
  • 2 Idaho potatoes, peeled and cut into large cubes
  • to taste Salt and pepper

Recipe Directions:

Place large stockpot over medium heat and add bacon. Cook bacon until browned and crisp. Add onions and cook until translucent. Add greens and cabbage, sautéing for about 5 minutes. Add water, sugar, thyme, smoked paprika and potatoes, and season with salt and pepper to taste. Simmer covered 25-30 minutes, stirring occasionally, until vegetables are fork tender.
