Preheat grill to medium heat. Crack and whisk the eggs in a small bowl with a pinch of salt and pepper. Drain and rinse the beans.
Cook the rice according to packet instructions.
Melt the butter in a small frying pan on medium heat. Once melted, add the eggs and move around the pan with a spatula until whites and yolks are cooked firm.
To build the quesadillas, start with a layer of cheese, about ¼ cup, on one half of the tortilla. Top with eggs, beans, rice, and salsa. Fold over tortilla and wrap tightly in tinfoil for later. *
Place foil packets on preheated grill and cook for 3-4 minutes on each side to warm through. Serve with extra salsa on the side for dipping.
*This recipe is great to make ahead of time and bring along on a camping trip to cook in the morning for breakfast.
