Grilled Breakfast Quesadillas

Sure, you can make a killer lunch or dinner on the grill, but did you know you can also make an amazing breakfast? See for yourself with this simple, Mexican-style recipe for grilled breakfast quesadillas!

Ingredients:

  • 3 Large Giant Eagle eggs
  • ⅛ tsp. kosher salt
  • ⅛ tsp. ground black pepper
  • 1 cup Giant Eagle black beans
  • 1 cup Knorr® Fiesta Sides Mexican rice
  • 1 Tbsp. Giant Eagle unsalted butter
  • 1 cup Giant Eagle shredded 4 cheese Mexican blend
  • 4 large Mission® burrito size flour tortillas
  • 4 Tbsp. Giant Eagle original salsa (+ extra for dipping)

Directions:

  Prep Time: 10 min. • Cook Time: 15 min.

Preheat grill to medium heat. Crack and whisk the eggs in a small bowl with a pinch of salt and pepper. Drain and rinse the beans.

Cook the rice according to packet instructions.

Melt the butter in a small frying pan on medium heat. Once melted, add the eggs and move around the pan with a spatula until whites and yolks are cooked firm.

To build the quesadillas, start with a layer of cheese, about ¼ cup, on one half of the tortilla. Top with eggs, beans, rice, and salsa. Fold over tortilla and wrap tightly in tinfoil for later. *

Place foil packets on preheated grill and cook for 3-4 minutes on each side to warm through. Serve with extra salsa on the side for dipping.


*This recipe is great to make ahead of time and bring along on a camping trip to cook in the morning for breakfast.
