Grilled Pineapple with Coconut Caramel

  • 1 golden pineapple
  • 1 cup sugar
  • ¼ cup Karo® light corn syrup
  • 1 cup Thai Kitchen® unsweetened coconut milk
  • 1 pint Haagen-Dazs® Non-Dairy Coconut Caramel Frozen Dessert
  • 4 oz. Dang® coconut chips


  Prep Time: 5 min. • Cook Time: 10 min.

Preheat grill or barbecue.

Peel and cut the pineapple into 1-inch thick slices. Use a knife or round cutter to remove the core from each slice.

Make the caramel sauce; place the sugar, corn syrup and ¼ cup water in a medium saucepan and place over medium high heat. Cook, stirring occasionally until the sugar turns golden brown. Remove pan from heat and add coconut milk. Careful, the mixture will boil up and spatter. Once it has calmed down return to heat and continue to cook, stirring occasionally, until the sauce is smooth and thickened, about 5 minutes.

Lightly oil your preheated grill or barbecue and place the pineapple slices on the grill. Grill the pineapple, turning occasionally, until nicely caramelized.

Serve the grilled pineapple topped with the Haagen-Dazs Non-Dairy Coconut Caramel Frozen Dessert, the caramel sauce and the coconut chips.
