Peppermint Crinkle Cookies

Make easy, delicious cookies your friends and family will love with this recipe for chocolate mint cookies. With just the right amount of peppermint and Hersey’s cocoa, these cookie confections are a sweet, refreshing dessert.

Ingredients:

  • 1 cup Giant Eagle all-purpose flour
  • ½ cup Hershey's natural unsweetened cocoa
  • 1 tsp. Clabber Girl® double acting baking powder
  • ½ tsp. salt
  • ¾ cup Giant Eagle granulated sugar
  • 2 Giant Eagle large eggs
  • 1 tsp. McCormick® pure peppermint extract
  • ¼ cup Giant Eagle pure vegetable oil
  • 1 cup Giant Eagle powdered confectionary sugar, for coating the cookies

Directions:

  Prep Time: 10 min. + 2 hrs. chilling • Cook Time: 10 min.

In a medium bowl, whisk the flour, cocoa powder, baking powder and salt until combined. Set aside.

In a separate bowl of a stand mixer, add the granulated sugar, eggs, peppermint extract and oil. Beat on medium-high speed for 2 minutes, or until the mixture is light and fluffy. Then gradually add the flour mixture and beat on medium-low speed until combined.

Wrap the dough in plastic wrap and refrigerate for at least 2 hours (or up to 24 hours) until the dough is chilled completely through.

Preheat the oven to 350°F.

Line a large cookie sheet with parchment paper. Fill a small bowl with powdered sugar.

Form the dough into 1-inch round balls. Dip each dough ball in the powdered sugar until it is completely covered on all sides, and then place them at least 2 inches apart on the prepared baking sheet.

Bake for 10 minutes. Then remove the baking sheet from the oven, and let the cookies cool on the baking sheet for 3 minutes. Transfer the cookies to a wire rack and let them cool until they reach room temperature.
