Ingredients:

  • 1 whole chicken (3.5-5 lbs avg weight)
  • 1 can (12 oz.) your favorite beer (Lager, Pilsner, Stout). Rinse can under water.
  • 2 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • ½ tsp. coriander, ground
  • 1 tsp. kosher salt
  • ½ tsp. black pepper, ground

Directions:

Prep Time: 5 min. • Cook Time: 1 hr. 30 min.

Preheat the grill to medium heat. Once the grill is hot, turn off one side of the grill.

Combine the dry seasonings in a small mixing bowl. Stir together so all spices are mixed.

Rub olive oil all over the chicken.

Apply the dry rub to the chicken, rub the spices all over the chicken so it is evenly covered in the spice mix.

Open the beer can and place inside of the chicken.

Securely hold the can inside the chicken and place the chicken on the side of the grill with the flame turned off. Use the chicken’s legs to create a tripod which will prevent the chicken from falling over while cooking. Close the grill lid.

Allow the chicken to cook for 1½ hours or until internal temperature reaches 165ºF. (It is important not to open the grill too frequently as this will add to the overall cook time)

Remove the chicken from the grill, discard the beer can and cut the chicken into pieces.

Serve with your favorite sauces and side dishes.

Note: Root Beer, Cola, & Cherry Cola will also work well in place of Beer if desired.

Beer Marinated Grilled Chicken

  • 8-12 pieces chicken sections (Breast, Thighs, Legs, Wings)
  • 1 can (12 oz.) your favorite beer (Lager, Pilsner, Stout). Rinse can under water.
  • 2 Tbsp. lemon juice
  • 4 Tbsp. olive oil
  • 2 tsp. garlic powder
  • 2 tsp. paprika
  • 1 tsp. coriander, ground
  • 2 tsp. kosher salt
  • 1 tsp. black pepper, ground

Directions:

Prep Time: 5 min. • Cook Time: 25+ min.

Place the pieces of chicken into a gallon freezer style plastic zip bag.

Add the beer, olive oil, & lemon juice to the bag, sealed bag and gently shake.

Refrigerate the chicken in the bag overnight or for at least 4 hours (longer the better).

Make sure to agitate and turn the bags every so many hours.

Preheat the grill to medium heat.

Combine the dry seasonings in a small mixing bowl. Stir together so all spices are mixed.

Apply the dry rub to the chicken sections, rub the spices all over the chicken so it is evenly covered in the spice mix.

Place the chicken skin-side down onto the hot grill.

Allow the chicken to cook for 5-10 minutes on each side, flipping only a few times until internal temperature reaches 165ºF. (cook time will depend on thickness of the chicken)

Remove the chicken from the grill and allow to rest for 5 minutes before serving.

Serve with your favorite sauces and side dishes.

Note: Root Beer, Cola, & Cherry Cola will also work well in place of Beer if desired.
