Have a meatless Mexican-style meal with this recipe that features Beyond Meat Beyond Beef. With soft corn tortillas, black beans, hot chipotles, and salsa, these vegetarian tostadas are the perfect Beyond Meat recipe to add to your collection.


  • 2 Tbsp. Herdez hot chipotles
  • 1 lime
  • 2 avocados
  • 1 head iceberg lettuce
  • ½ bunch cilantro
  • 8 Giant Eagle soft fajita size white corn tortillas
  • 2 tsp. Market District extra virgin olive oil, divided
  • 1 lb. Beyond Meat Beyond Beef
  • ¼ tsp. ground black pepper
  • ½ tsp. kosher salt
  • 1 (15.5 oz.) can Giant Eagle black beans
  • 1 cup Giant Eagle medium Mexican-style salsa


  Prep Time: 20 min. • Cook Time: 15 min.

Preheat oven to 350°F. Chop the chipotle peppers and combine with a little of the sauce from the can; this should measure about 2 tablespoons total, set aside. Cut the lime into wedges. Peel and dice the avocados. Shred the lettuce. Pick leaves of the cilantro for garnish.

Brush the tortillas with 1 teaspoon olive oil and place on a rack on a sheet pan in oven. Toast until light brown and crispy, 5-10 minutes. Remove from oven and set aside.

While the tortillas are toasting, heat a medium frying pan over medium-high heat. Once hot, add 1 teaspoon of olive oil and the Beyond Meat. Cook, breaking up until cooked through and crumbly.* Add the chipotles, black pepper, and salt. Stir to combine.

Heat the black beans in a small pot or in the microwave. Place 2 tortillas each on 4 plates. Top the tortillas with the Beyond Meat, then the black beans, lettuce, salsa, avocado and cilantro. Serve with the lime wedges.

*For food safety, cook Beyond Meat Grounds to an internal temperature of 165°F.
