Thinly slice the Brie. Core apples and cut into ½-inch slices. Pick sage leaves from stem. Arrange 4-5 slices of brie on one slice of bread. Arrange 4-5 slices of apples on top and top with bread.
Melt half of the butter in a frying pan on medium heat. Once melted add two of the sandwiches to the pan. Cook for 4 minutes then place sage leaves on top of uncooked half of sandwich and flip. Cook for another 4 minutes and remove from pan. Melt remaining butter and repeat with other two sandwiches.
Slice in half and enjoy.
