Make a delicious Mexican breakfast with this recipe for campfire chilaquiles—tortilla chips and eggs smothered in salsa, avocado and cotija cheese.


  • 5 large Giant Eagle eggs
  • ½ tsp. kosher salt
  • 1 avocado
  • ½ bunch cilantro
  • 2 cups Market District tortilla chips
  • 2 cups Giant Eagle mild salsa
  • 1 oz. Supremo® grated Cotija cheese


  Prep Time: 10 min. • Cook Time: 20 min.

Crack and whisk the eggs in a bowl and season with salt. Peel and dice the avocado. Roughly chop the cilantro.

Crush up corn chips and place in a pan with half the salsa. Place the pan over your campfire and cook, stirring every few minutes. Stir in the eggs and scramble, about 5-6 minutes

Top with more salsa, cheese, avocado and cilantro and enjoy!
