Mix zest with chipotle seasoning, olive oil, 1 teaspoon of salt, and ½ teaspoon of pepper. Season the chicken with the lime zest spice mix.
Heat a grill pan on high on the stove (if you do not have a grill pan, a regular pan will work fine). Place seasoned chicken breasts on the pan and cook on each side for 6-8 minutes or until cooked through.*
While the chicken is cooking, follow the instructions for the rice. Once cooked, combine with the beans and chopped cilantro and set aside.
Cut avocados in half and remove the pit. Scoop out avocado and place in bowl. Add lime juice, ½ tsp of salt, and ¼ tsp of pepper. Use a fork to mash the avocado until smooth.
Divide the rice between the plates, then serve with the chicken and smashed avocado.
*For food safety, cook chicken to an internal temperature of 165°F.
