General Tso's Cauliflower Tacos

Cooking with cauliflower is a great way to enjoy your favorite spices and seasonings in a healthier way. With this recipe for General Tso’s cauliflower tacos you can enjoy delicious, lower-calorie Asian-fusion tacos any night of the week!

Ingredients:

  • 2 heads cauliflower
  • 2 tsp. vegetable oil
  • 1 bottle (12 oz.) Market District General Tso sauce
  • 1 Tbsp. toasted sesame seeds
  • 1 head romaine lettuce
  • 6 radishes
  • 1 bunch cilantro
  • 1 bunch green onions
  • 2 limes
  • 8 Giant Eagle soft taco flour tortillas

Directions:

  Prep Time: 10 min. • Cook Time: 25 min.

Preheat oven to 450°F. Trim and cut the cauliflower into florets. Toss the cauliflower with the vegetable oil and place on a non-stick or parchment-lined sheet pan. Place in oven and roast until tender and slightly brown, about 15 minutes.

Pour the General Tso’s sauce over the cauliflower and toss to coat. Return to the oven and cook, stirring to coat occasionally, for about 10 minutes. Sprinkle with the toasted sesame seeds.

While the cauliflower is cooking, shred the lettuce. Thinly slice the radishes. Roughly chop the cilantro and slice the green onions. Toss the lettuce, radishes, cilantro, and green onions in a bowl. Cut the limes into wedges and heat the tortillas.

Serve the cauliflower with the salad, tortillas, and lime wedges. Allow your guests to build their own tacos.
