Preheat grill to high. Trim romaine and cut in half. Spray with cooking spray and sprinkle with ½ teaspoon of salt. Halve the cherry tomatoes. Pick the mint leaves and chiffonade. Cube the feta. Peel and dice the red onion. Peel and finely chop the garlic. In a small bowl, combine the red wine vinegar, chopped garlic, dried oregano, ⅓ cup olive oil, and 1 teaspoon of salt.
Grill romaine for 2-3 minutes to lightly char. Arrange on a platter and sprinkle with feta, cherry tomatoes, red onion, and mint. Drizzle with vinaigrette.
