Grilled Romaine Greek-Style

If you’ve never tried a grilled salad, this summer is the time! With lightly grilled romaine lettuce, cherry tomatoes, mint, red onion and feta cheese, this warm summer salad is a crisp and unique addition to your grilling recipes.

Ingredients:

  • 4 romaine hearts
  • Pam® Original cooking oil spray
  • ½ tsp. kosher salt
  • 10 oz. Market District cherry #9 Fall in Love Again tomatoes
  • 1 pkg. (0.75 oz.) Nature’s Basket mint
  • 4 oz. Real Greek feta cheese
  • ½ red onion


Vinaigrette:

  • 2 cloves garlic
  • 3 Tbsp. Delallo® red wine vinegar
  • ½ tsp. Simply Organic® dried oregano
  • ⅓ cup Market District extra virgin olive oil
  • 1 tsp. kosher salt

Directions:

  Prep Time: 10 min. • Cook Time: 5 min.

Preheat grill to high. Trim romaine and cut in half. Spray with cooking spray and sprinkle with ½ teaspoon of salt. Halve the cherry tomatoes. Pick the mint leaves and chiffonade. Cube the feta. Peel and dice the red onion. Peel and finely chop the garlic. In a small bowl, combine the red wine vinegar, chopped garlic, dried oregano, ⅓ cup olive oil, and 1 teaspoon of salt.

Grill romaine for 2-3 minutes to lightly char. Arrange on a platter and sprinkle with feta, cherry tomatoes, red onion, and mint. Drizzle with vinaigrette.
