Grilled Zucchini

Grilled veggies need no introduction. Try our zucchini recipes for an incredibly fresh dinner option. Grilled zucchini topped with cherry tomatoes and parmesan cheese will be a go-to this summer.

Ingredients:

  • 2 lbs. small zucchini
  • 1 pkg. (10 oz.) Market District True Rebel Mix cherry tomatoes
  • 6 cloves garlic
  • 1 pkg. (0.75 oz.) Nature’s Basket mint
  • ¼ cup + 1 Tbsp. Market District extra virgin olive oil, divided
  • ¾ tsp. kosher salt, divided
  • ¾ tsp. ground black pepper, divided
  • 3 Tbsp. DeLallo® red wine vinegar
  • 1 oz. Belgioioso® Parmesan wedge

Directions:

Preheat your grill. Cut the zucchini in half lengthwise. Halve the cherry tomatoes. Peel and thinly slice the garlic. Pick and finely chop the mint. Toss the zucchini with 1 tablespoon of olive oil and ¼ teaspoon of salt and pepper.

Combine the halved cherry tomatoes with ¼ cup olive oil, 3 tablespoons of red wine vinegar, the chopped mint, ½ teaspoon of salt and pepper, and the sliced garlic. Toss together and let sit while the zucchini cooks.

Place the zucchini on the preheated grill. Cook for 3-4 minutes on each side or until tender.

Arrange the zucchini on a platter and spoon the cherry tomatoes and the juices over the zucchini. Grate the parmesan on top and enjoy!
