Preheat your grill. Cut the zucchini in half lengthwise. Halve the cherry tomatoes. Peel and thinly slice the garlic. Pick and finely chop the mint. Toss the zucchini with 1 tablespoon of olive oil and ¼ teaspoon of salt and pepper.
Combine the halved cherry tomatoes with ¼ cup olive oil, 3 tablespoons of red wine vinegar, the chopped mint, ½ teaspoon of salt and pepper, and the sliced garlic. Toss together and let sit while the zucchini cooks.
Place the zucchini on the preheated grill. Cook for 3-4 minutes on each side or until tender.
Arrange the zucchini on a platter and spoon the cherry tomatoes and the juices over the zucchini. Grate the parmesan on top and enjoy!
