Parsley Roasted Chicken

with Steamed Vegetables

Ingredients:

  • 2 garlic cloves
  • ½ bunch parsley
  • 2 cups Giant Eagle shaved Brussels sprouts
  • 1 lb. red potatoes
  • 1 lemon
  • ¼ cup olive oil
  • 1 lb. Giant Eagle chicken breast, boneless skinless
  • 1 12-oz. bag baby carrots
  • Salt and pepper to taste

Directions:

Preheat oven to 400°F. Peel garlic. Rinse parsley. Remove ends from Brussels sprouts and cut into thin slices. Cut red potatoes into a ½-inch dice. Cut lemon in half and reserve one half for cooking and cut the other half into 4 wedges.

In a blender, combine parsley, 2 cloves of garlic, ¼ cup of olive oil and a generous pinch of salt and pepper. Blend until smooth (if you do not have a blender this can be done by finely chopping parsley and garlic and combining in a small bowl with the salt pepper and oil).

Season chicken breasts with 1 tablespoon of parsley sauce and additional salt and pepper, make sure chicken is fully coated. Place chicken on a foil-lined sheet tray and put in preheated oven for 15-17 minutes or until internal temperature reaches at least 165°F.

Meanwhile, place diced red potatoes in a pot and fill with cold water, (you want the pot to have enough room to add Brussels sprouts and carrots) add a large pinch of salt and put on stove over medium-high heat.

After 15 minutes, prick a potato with a fork or knife, you want potato to feel about ¾ cooked. If it is cooked, add in baby carrots and cook 3-4 minutes. In the last minute of cooking, add in thinly sliced Brussels sprouts. Strain vegetables and shake off excess water. Toss with lemon juice and a pinch of salt and pepper.

Arrange steamed vegetables on a plate or platter and top with chicken breast and a generous dollop of parsley sauce, squeeze with lemon wedge and enjoy.
