Preheat the grill to medium-high. Halve cherry tomatoes. Peel and finely chop the garlic. Halve the lemon. Toss the shrimp with the lemon pepper and skewer.
In a mixing bowl, combine the cherry tomatoes, garlic, basil, 2 tablespoons of olive oil, 1 tablespoon balsamic vinegar, ½ teaspoon of salt, and ¼ teaspoon of pepper. Toss together until everything is well mixed.
Place the shrimp skewers and the lemon halves on the preheated grill. Cook for 3-4 minutes on each side.* Remove lemon when it is nicely charred.
Serve the shrimp skewers with the marinated tomatoes and a nice squeeze of the grilled lemon.
*For food safety, cook shrimp until pink and opaque.
