For busy nights when you’re short on the time and energy required for a complicated recipe, check out this one sheet vegetarian gnocchi that only takes 25 minutes to create!


  • 1 yellow bell pepper, cut into 1-inch cubes
  • 1 shallot, sliced
  • 8 oz. Giant Eagle Brussels sprouts, halved
  • ½ bunch fresh sage, chopped
  • 2 pkg. (16 oz.) Market District potato gnocchi
  • 1 cup Market District Cherry No. 9 Fall in Love Again tomatoes
  • 1 Tbsp. Market District extra virgin olive oil
  • ½ tsp. kosher salt
  • ¼ tsp. ground black pepper
  • ¼ cup Giant Eagle fancy shredded Parmesan & Romano cheese blend


   Prep Time: 10 min. • Cook Time: 15 min.

Preheat oven to 450°F. Toss the pepper, shallot, Brussels sprouts, sage, gnocchi, and tomatoes with olive oil, salt, and black pepper. Pour mixture onto a non-stick or foil lined sheet pan and place in the oven. Roast for about 15 minutes or until the vegetables are tender.

Sprinkle with Parmesan and Romano cheese and serve.
