First off, buying a fresh rotisserie chicken is the best way to get dinner on the table in no time flat. Just add potatoes and veggies or a salad and boom! Count that as one easy meal a week. And, always a fave.

But then, what to do with what’s left? So many ideas. You’ve got your go-to chicken salad, the ever popular chicken stir-fry and simply delicious chicken sandwiches. Kick it up a notch and make a panini or quesadilla with melty cheese and a little salsa!

Always a good add to a salad — fruit or leaf — and fabulous on a flat bread with avocado and arugula. You can use almost any sauce on leftover chicken and change the face of dinner in a minute. Each adds distinct flavor, and so simple.

Your chicken will actually stay fresh in the refrigerator for three to four days provided it is set at 40°F or cooler to keep it safe. And, when you get to the very end, use the bones and scrap meat to make a broth for use in soup, stews, risottos or just to drink from a mug.
