Grilled Corn with Chipotle Butter

  • 4 ears corn on the cob
  • ½ bunch cilantro
  • 2 limes
  • 4 Tbsp. Market District unsalted butter, softened
  • 1 tsp. McIlhenny® chipotle tabasco
  • 1 tsp. Giant Eagle paprika
  • ½ tsp. kosher salt
  • ½ tsp. ground black pepper
  • 2 Tbsp. Market District extra virgin olive oil

Pre-heat your grill on high. Shuck the corn and remove all the silk. Finely chop the cilantro. Cut the limes into wedges.

In a mixing bowl combined the softened butter, tabasco, chopped cilantro, paprika and ½ teaspoon of salt and pepper.

Rub the corn with the oil and place on preheated grill. Grill corn 3-4 minutes on each side so all the surface area gets a nice char.

Once charred remove from grill and spread with the butter and squeeze with the lime wedges.
