Potato Buttermilk Rolls

“Roll” with the punches in this recipe for baked honey buttermilk rolls. Enjoy as a side dish, or smother with your favorite butter or jam and eat one on its own, for a deliciously fluffy French roll snack!

Ingredients:

    Dough
  • 2 oz. Giant Eagle unsalted butter
  • 1½ cups Giant Eagle 1% milkfat lowfat cultured buttermilk
  • 2 oz. Nature's Basket 100% pure organic honey
  • 1 lb. (3 ½ cups) Giant Eagle all-purposed flour
  • 1 packet (7g) Red Star yeast - original quick rise
  • 1½ tsp. kosher salt
  • 1 Giant Eagle large egg
  • 2 oz. (½ cup) Giant Eagle instant mashed potatoes

  • Glaze
  • 1 Giant Eagle large egg
  • 2 oz. Giant Eagle unsalted butter, melted

Directions:

  Prep Time: 2 hrs. 10 min. • Cook Time: 35 min.

To make the dough: Melt the butter in a small sauce pan. Add the buttermilk and honey and warm to body temperature.

Transfer the buttermilk mixture to a bowl. Add the flour, yeast, salt, egg and potato flakes. Combine the ingredients and mix until cohesive. Knead the dough, by hand or mixer, until it's smooth, about 5-10 minutes. The dough will become fairly elastic, though it'll still be quite soft and sticky.

Place the kneaded dough in a greased bowl, cover it, and allow it to rise for 60-90 minutes, until it's quite puffy (though not necessarily doubled in bulk.)

Divide the dough into 12 pieces. Shape each piece into a ball, and place in a lightly greased 9-inch round pan or cast iron skillet. Cover the pan, and let the rolls rise until they're touching each other and puffy, about 60 minutes.

While the rolls are rising, preheat the oven to 350°F.

To make the glaze, whisk the egg with a little water and brush the tops of the rolls.

Bake the rolls for 30-35 minutes, or until they're a light golden brown.

Remove the bread or rolls from the oven, and brush with melted butter.
