Peel and roughly chop the carrot. Peel and grate the ginger.
In a food processor combine the carrots, apricots, walnuts, ginger, half of the shredded coconut, almond butter, honey, vanilla and ground cinnamon. Pulse until everything comes together and feels sticky enough to form a ball.
Scoop out ¼ cup size portions of mixture and roll into a ball. Roll in the coconut and let set in fridge for 15-20 minutes.
Keep in fridge until ready to eat and enjoy!
