Give yourself an extra boost of pep with this sweet and savory recipe for carrot cake energy bars.

Ingredients:

  • 2 carrots
  • 1 oz. fresh ginger
  • 1 cup Giant Eagle dried apricots
  • 1 cup Fisher® walnuts halves & pieces
  • 1 cup Bob’s Red Mill® shredded coconut, divided
  • ½ cup Justin’s® classic almond butter
  • ¼ cup Nature’s Basket honey
  • 1 tsp. Simply Organic® vanilla extract
  • 1 tsp. McCormick® ground cinnamon

Directions:

  Prep Time: 20 min. • Cook Time: 0 min.

Peel and roughly chop the carrot. Peel and grate the ginger.

In a food processor combine the carrots, apricots, walnuts, ginger, half of the shredded coconut, almond butter, honey, vanilla and ground cinnamon. Pulse until everything comes together and feels sticky enough to form a ball.

Scoop out ¼ cup size portions of mixture and roll into a ball. Roll in the coconut and let set in fridge for 15-20 minutes.

Keep in fridge until ready to eat and enjoy!
