How to Make Rolled Ice Cream

Move over classic scooped ice cream – hello Thai rolled ice cream! We can’t think of a more perfect summertime activity to do with your kids than making homemade rolled ice cream! No fancy equipment, a couple ingredients, and lots of fun make rolled ice cream a simple and unique dessert. This sweet frozen treat originated in Thailand around 2012. Known as “stir fried ice cream,” it has had growing popularity in the United States since 2015 as a trendy and “Instagram-worthy” dessert.

The best part of homemade ice cream is that you can make any flavor you want! Let’s get started!

Tools:
• Measuring cups/spoons
• Wisk
• Sheet pan
• Flat metal spatula or paint scraper or putty knife
• Small pot
• Tongs
• Small serving bowl

Ingredients for ice cream base:
• 2 cups of cold heavy cream
• 1 can (14 oz.) of sweetened condensed milk
• A ½ teaspoon of Kosher salt
• Cocoa powder (optional)
• Fruit preservatives (optional)
*For different flavors add ingredients like cocoa powder, fresh fruit, or fruit preserves.


Step 1: Prep Materials and Ingredients.
Place sheet pan in the freezer at least two hours before making your rolled ice cream.

Step 2: Make Your Ice Cream Base
Combine your main ingredients into a medium sized pot – equal parts heavy cream, condensed milk, and a pinch of salt. If you would like to create more flavors other than the simple base, add in ingredients like cocoa powder, vanilla, and fruit preservatives until it is your desired flavor.

Step 3: Heat up Ice Cream Base
Place the pot on a burner with medium heat. Stir continuously until it begins to boil. When boiling, remove from heat, and place in another bowl to chill. Place in refrigerator for 20-30 minutes.


Step 4: Add in Goodies!
Now comes the super fun part! After the ice cream base has completely cooled, take it out of the refrigerator and pour the candies, cookies, or other sweet treats you want to add! Remove the cold sheet pan from the freezer and pour the mixture into the middle of the pan.


Step 5: Mix it Up!
Use your metal spatula or clean paint scraper to chop and mix the treats until it is well blended into the ice cream base. If it runs to the edge keep scraping it into a pile in the center. Mix for 2-3 minutes.

Step 6: Spread it Out
After your ice cream is fully mixed, spread it out flat on the cold sheet pan, about ⅛ -inch thick. Place the pan back in the freezer for at least 2-4 hours. *If the ice cream is not cold enough it will not roll properly.


Step 7: Roll it Out
Once your ice cream is chilled and hardened you can begin to create your ice cream rolls. Take your metal spatula or paint scraper and hold it at a 45° angle at the edge of the ice cream closest to your body. Push the ice cream away from you. Grab the roll with tongs and place in a small serving bowl.


Step 8: Top it Off!
Garnish your rolled ice cream with more goodies! Add whipped cream, sprinkles, chocolate syrup, fruit – you name it, you can add it!
